Lemon Meringue Cup-Cakes

"When life gives you lemon, you make lemonade"-  a quote from Joan Collins.  For me, when life gives you lemon, you bake Lemon Meringue Cup-Cakes.

I love lemon because it is zesty and have the 'pick you up' mood that will stay during the day!! This cupcake is not sour but nicely blend with the home-made lemon curd filling inside the cupcakes. Topping is Meringue that is put over the oven grill to give a 'brown' effect.

Totally enjoyable.
