Tropical Paradise Cupcakes

I love the thought of making some with a tropical theme- with coconut and pineapple. It gives a holiday exotic feeling towards it. I came up with new version of cupcakes using Pandan juice to give a nice smell and flavour to cupcakes. I know Vanilla or Chocolate seems to be everyone favourite but as I said, I wanted to give an exotic holiday feel to this version of cupcakes. I added in some semolina to give some texture to the cupcake base.

Toppings include some chantily cream, desiccated coconut which has been hand-grated to give it more coarse texture instead of the one you buy grated at the market.  Of course,  end it up with chopped pineapple! Wonderful!!!



 $2 each with minimum order of 12 pieces.



I can do a big cake version for you to enjoy. Reminds you much of the old British cake - very buttery taste. I will include a side- order of the Chantilly cream for you to serve with the cake.
