A client recently inquired me for a list of cupcakes that I offered. My cupcakes are what I term them as 'Rustic'. Baking with wellness concept and using food experiences that I've been through, I came up with these versions. The following is the list of cupcakes that I offer for sale. Jackie O Double Fudge Cake

For the year 2012, I'm attempting to bake bigger desserts for the simple reason - great for family gatherings to share with members and friends. Also, cakes for great occasion such as birthdays and anniversaries.

This is a triple layered dark chocolate fudge cake. Beautiful taste and moist. The Caramel topping is not sweet - home made and blends in well with the dark bitter chocolate cake. The dark sides of the cake is none other than the blended cake, being pasted on the sides. Love the idea and how it turns out on the cake.

Tapas and Desserts

The Senor and I have decided that we would like to do something different for our Open House, after a week of Syawal, eating Ketupat, satay, Rendang and Nasi minyak. After much discussions, we agreed for a theme of Tapas and Desserts. Tapas or appetizers in Spanish cuisine fits into our criteria of finger food. We also decided that since both of us have friends from different faiths and culture, we ensured that we catered for everyone, including vegetarians.

It also provided an opportunity for our guests to try the food that we catered ourselves. Since they come in bite sizes, it took a few days of preparations to get them right. We initially came up with some 28 items but the following are what we managed to do. The Senor helped me with the cookies and some cakes...while I handled most of the Tapas myself.

The food was a hit with the guests and we ran out of food at the end of the evening. Tired but satisfied!!

Cake Sampler

Salam Ramadhan!! How have you been this fasting month? I always thought that I would be less busy during the fasting month but I was wrong... as I continued to receive orders on a daily basis. Since I just got into Facebook recently, I thought it would be a good idea to introduce to my new clients some of the cakes that I normally bake and up for sale from this blog. I decided to do sampler bake sale on the last two Fridays and Sundays. The intention is to get clients to try small sizes of the cakes so that if they like it, they can order the sizes that I normally sell here in this blog.

The response was quite amazing.. Thank you for all the positive vibes. Below are some of the photos of the bakes sold..

Apricot cheese cake! Thanks to the availability of fresh apricots in the supermarket.

Fruit Tartlets. I normally sell them for a $1 but they gone for a song, at only 50 cents each. I used fresh imported fruits - which I must confess, are not cheap.

A taste of the cake sampler pack - From top : Apple Mapple, Oreo Cheesecake, Orange Cream Muffin, Fruits Tartlets and Chocolate Banana Cakes. All these for $5 a pack!

For Sundays, I did a cupcake sampler pack... as you can see below. Teh Tarik version, Sticky Date Pudding ( I love the spongy feel to the cake) with butter scotch sauce, Choco Mud Cake with Strawberry topping and Nectarine Cupcakes. All for a song of $6.

I really like the Nectarines cupcakes cos it is soft and fruity!!

Thanks to the encouragement from the recent ebunda forum on Women Entrepreneurs. I participated as part of the panel for discussions and one of the topics shared was utilization of Internet as a marketing tool. No doubt I have this blog but I found out Facebook is a good way to reach directly to customers. So bear with me if I am slow on the blog now that I have Facebook.

Recently, as part of Rano8nniversary celebrations, I took a booth to sell my baked goodies. 3 days of hard work but accomplished a lot, made new friends and it is nice to meet customers face to face, rather than through the Net.

Then came birth... Red Velvet Sandwiches. I know many are baking the cupcakes version….so I decided not to emulate the same but come up with a slight variation – sandwiches. Surprisingly it was a hit, not only cos of it’s red colour but the flavour and taste of cream cheese filling. They are $1 each and unless you would like a large of order of 30 pieces, I will only offer them when I bake. So look out for my status on FB.

Pear and Ginger Mini Cakes

Real Pear Slices in the Cake.

I always like the idea of baking using fresh fruits. It gave an excellent excuse to eat fruits and to reduce the sugar content in the baking recipe. Pear has to be one of the least utilised ingredients in baking compared to other fruits such as strawberries, apples and oranges.

Instead of making a whole cake, I decided to make it mini size for the simple reason, it looks delectable and we do not need to cut it when times of serving.

When I first bake this mini cake, I realise there was something missing! I then decided to make a light vanilla custard sauce to go with it. What an excellent idea cos the lovely taste of the cake, fruit and the soft vanilla sauce compliment one another.

Don't worry about the ginger part. It is not overbearing but a tinge to give it some taste to the cake. A great combination that is often overlooked when comes to baking.

Mango Almond Meal Cake

Not every cake is the same. This is what I gather after baking for many years. There are several techniques which provide different results. Some cakes do need you to beat the butter first and then add the eggs but this one is different. Beating the eggs first makes the cake more lighter and fluffy.

Mangoes are great since they are in season. They adorn the top of the cake, coated with a light sugar syrup that is cooked in vanilla pod - to give it a fresh flavour. I know many fear when they read there is sugar syrup that makes the cake appears too sweet. Sugar is controlled to give the cake the optimum taste and therefore has a balanced sweet taste, not overbearing!

I used half - half flour and ground almond to give the cake more texture. Definitely light and great taste for an afternoon tea. I brought this to my mum's house for an afternoon tea with the siblings. Guess what? It didn't last long, gone in 20 minutes!!

Mango Cream Meringue

Was really excited on the news that Prince William got married to Princess Kate. Decided to bake something special in honour of their wedding that was telecast live and seen by over 2 billion viewers world wide. I thought that was a significant event. So, I decided to bake a cake worth eating during a wedding. I'm not a fan of sugar icing that normally dress a wedding cake. I wanted something of a dessert. Bought a wedding couple doll to decorate the cake.. heheee

This cake is slightly different - a meringue but added grated coconut to make it marshmallowy. The texture is soft and chewy.

Sometimes we are afraid eating cake with cream due to it's fat content. But actually there is not much of it since this cake is butter-less. Could you believe that? Could it be possible, you may ask? Yes! It is!

The cake is adorned with fresh mango stripes, decorated on top of the cream. Intention to give different texture and flavour to the cake. Result : wonderfully tasted cake!!

If you are interested to try this cake, the price is $35. Of course, it will be without the wedding doll and the red hearts confetti that I used in the photo. :)

Lemon Meringue Cup-Cakes

"When life gives you lemon, you make lemonade"- a quote from Joan Collins. For me, when life gives you lemon, you bake Lemon Meringue Cup-Cakes.

I love lemon because it is zesty and have the 'pick you up' mood that will stay during the day!! This cupcake is not sour but nicely blend with the home-made lemon curd filling inside the cupcakes. Topping is Meringue that is put over the oven grill to give a 'brown' effect.

Totally enjoyable.

Chocolate Layered Cake

I know many customers did ask if I sell Kek Batik. I told them politely I do not as I wanted to offer something different from what is available in the market. I also not a big fan of Kek Lapis as it takes too much time, colour and contains too many eggs.

This layer cake may look similar but I can confirm it is different. Instead of baking each layer, I bake the layers individually. Then stack them up with my home-made chocolate syrup and smother it all over with a chocolate cream cheese frosting. The first time I tried it and get my own kids to try it, I saw half of the cake gone after their first try. Oh My!! Happy Kids, I guess!!

Tropical Paradise Cupcakes

I love the thought of making some with a tropical theme- with coconut and pineapple. It gives a holiday exotic feeling towards it. I came up with new version of cupcakes using Pandan juice to give a nice smell and flavour to cupcakes. I know Vanilla or Chocolate seems to be everyone favourite but as I said, I wanted to give an exotic holiday feel to this version of cupcakes. I added in some semolina to give some texture to the cupcake base.

Toppings include some chantily cream, desiccated coconut which has been hand-grated to give it more coarse texture instead of the one you buy grated at the market. Of course, end it up with chopped pineapple! Wonderful!!!

I can do a big cake version for you to enjoy. Reminds you much of the old British cake - very buttery taste. I will include a side- order of the Chantilly cream for you to serve with the cake.

Soft Chocolate Cookies

I've been baking these for the past few months and they have been selling well. For the simple reason....it's soft, light and delicious! It's like having a mini chocolate cake in your mouth as it melts easily.

I've also been doing some research on cookies. The traditional ones that we normally eat are sometimes hard. But these days, we can bake cookies that are soft, crumbly and melts in your mouth. This is it!!

Gluten-Free Chocolate Cake

I have always like to make simple cake. A customer requested me to bake her a flourless cake due to her allergy towards wheat flour. Using almond meal, I came up with this version of gluten-free cake. Please do not be alarmed to see the shape of the cake. That is how fragile it is due to the lack of flour. But you will be compensated by the soft texture and taste of the cake. I added a teasing flavour of freshly squeezed orange juice as I know orange and chocolate go well together.

Using icing sugar stencil, I made a birthday wish on the cake.

Raya's over.. finally got time to sit down with my cup of tea and blog about some new creations. My hubby seems to get caught on the baking bug and he has been inspiring me with new ideas. He baked chunky chocolate chip cookies with a small batch of brownie tuck in the middle of it. It was a sold out affair when he baked for our recent Raya Gathering.

The Chocolate Chip Cookies are soft and crumbly. Great if you dip them in fresh cold milk! They are large and good enough to share for you people but some would rather have them for themselves. :) Whatever your preference, these cookies are available for $2.50 each.

Sushi Cake part II

Selamat Hari Raya Maaf Dzahir dan Bathin. I hope it is not too late for me to wish my Muslim customers. As usual, I didn't had any spare moment since the fasting month of Ramadhan to update my blog. I have not abandoned it. Thank you to my recurrent customers who keep making orders from me during Ramadhan and Syawal. That kept me busy in the kitchen and prevented me from paying any attention to this blog. Anyway, I had some 50 items on this blog for customers to order. I think that is already a good amount.

Since most of the Raya orders are done, I will now have some time to spend trying new ideas. I have decided that since I have put on many desserts on display in the blog, I want to focus on finger foods or tapas. I will blog about them sometime next week after my open house on Sunday 3rd October 2010. Any of my regular customers wanting to come to the event, do SMS me on my regular mobile phone at the side of the blog so that I can them them the time of the event.

Anyway, I wanted to share with you today on an updated version of the sushi cake that I made for my hubby Pablo's birthday a few years ago. I had a special request from a customer that wanted me to put loads of Salmon on it and, if possible desgined the top layer. The following is the fruit of my labour:

Crab roe as the sunset scene setter, Preserved Ginger as flower,and I made a salmon rose with wasabi on top!

Orange Chocolate Cupcakes

I always believe that we can make something wonderful with naturally flavoured cakes and devoid ourselves from using artificial flavours and colourings. In this cupcake version, freshly squeezed orange juice are used to make the cupcake base. Topping is chocolate with roasted chopped pistachio sprinkled on it. For those allergic to nuts, an option can be made to use small mandarin orange wedges ( if they are available) or little jelly drops.

These medium sized cupcakes are price @ $2 each with minimum order of 12 pieces.

Science College Anti -Drug Campaign Carnival

Many of you may be surprised that I have decided to come out of the kitchen and join a school bazaar. I believe it is about time I do so. I did joined IWC Bazaar a couple of years and I have decided to join the Science School Bazaar, upon invitation of a teacher and the students. Since it is Sunday, I do not have to rush sending the kids to school and back, I figured why not. It is for a good cause and I love school bazaars. I used to be a class mum when my sons were schooling in Singapore and I do assist the teacher in organising class parties and helping the kids with reading.

On 18th July 2010, the Science College in Jalan Muara will have a Bazaar from 8 AM till 5 PM. The following will be made available for sale:

Maple Apple Cake

I'm back from my invigorating break and back to baking again. I tried this new English style tea cakes and get my husband and kids to try them. They loved it! Hubby Pablo said.. 'great for afternoon tea or with coffee'. I can see their approval from the delight of their eyes.

This baked cake is made up of.. obviously apple and maple.... but you don't taste the sandiness of the apple. It is soft, light and lovely. Although dusted with light sugar, it is not so obviously sweet. Come and try this!!

Arabfamilies had commissioned me to create something different for the funnyman, Mr. Kurapak's Birthday recently and I came up with a french dessert/cake.

A three layered cake with an interesting taste. The top tastes like cream puffs. Filling is made up of fresh fruits and cream, with more fresh fruits scattered all over the cake as the final product. It has a zingy lemony taste too!

Hazelnut Pavlova with Coffee Cream

I love baking meringue. Initially when I tried, it was difficult as it took some patience, consistency in making the right texture. But since I got many orders for pavlovas, it became an easy task for me. I recently wonder how if I use the meringue and add in some chocolate and nuts, to give it a different flavour instead of adding the traditional fruits.

This is the result. A great texture of chewy meringue, nuts and gooey chocolate all over it. Hubby Pablo likes it very much as he said.. 'goes well with my coffee!!"

Pistachio cupcakes with Rosewater topping

Vanilla Cupcakes - Engagement cuppies

I've been busy during the recent Chinese New Year. Thank you to my clients who had ordered cakes from me. It was challenging as my home was affected by power outage due to the recent flood. Alhamdulillah, I managed to handle all the orders even it was one day later. I made some new creations. Luckily I asked some of my clients whom they were sending the cakes to. I found out that some of them were sending the cakes to the same person. So, I managed to come up with new creations to ensure that the lucky Chinese family will not receive the same cake made by me. Will share those new cakes with you later.

Remember the vanilla cupcakes with strawberries that I made earlier? A client who got engaged today requested that I make for her those cuppies. I was frank with her that I would not be able to do those fancy designs as mine are rather simple. She insisted that I make for her and requested a blue and silver theme colour for her cuppies. I don't normally use food colouring and since she insisted I came up with this version.

To make it more striking, I added mangoes cut in heart -shaped design.

Initially, it was supposed to be put in a clear plastic box and ribbon- wrapped. But then, I thought this is a special day for this lovely lady. I decided to let her use my cake stand with glass cover that I bought during my recent trip to Australia. I think it makes a better presentation.

Mini Cup-cakes

I came up with two version of mini cupcakes.

The first one is white chocolate with fresh mango toppings. An interesting feature of this cup-cake is when you bite it, you can taste bite size real white chocolate chunks. The taste of real mango combination with the white chocolate makes this cup-cake taste awesome.

The second version is the mini version of the chocolate kit kat cup-cakes. Taste fudgy. The danger of these cup-cakes is that you will lose track of how many pieces you end up eating as it is simply irresistible.

Banana Caramel Cheesecake

When hubby Pablo suggested that we present Rano a cake for his birthday, it gave me a challenge to come up with something different. Last year, we made the Chocolate Kit Kat cup cakes and I wanted to do something different this year. So, I came up with a banana caramel cheesecake. The name sounds sweet but the cake is light and not really sweet.

The combination of banana. caramel and cheese sound exciting. Don't you think so? I now realise they do make a great combination. This cheesecake is the ideal finale to a dinner party and toffee caramel or hot fudge sauce will make great compliments to this wonderful cake.

Chopped almond toppings and self -made caramel shards. The caramel shards make wonderful glass-like figurines.

Happy New Year to all my clients! I'm back in business as usual. It was a good break for me to get away from baking for a while. On with the new products, on this post, I would like to share with you...a new cheesecake with a twist. Using marshmallow as topping and filling, this cheesecake is wonderful to taste. Some of you may be concern if the marshmallow are halal. Don't worry, the ones I used... definitely are. I made this recently during my sister's 29th wedding anniversary and they loved it. Fluffy cheese cake

Some of my clients do not like the taste of chunky (kantal) American version cheese cake and requested that I make for them, a light and fluffy sponge version of cheese cake. Here is my version of such a cheesecake.

I have added some cut pieces of fruits, namely strawberries and mangoes, to give flavour and natural colour to the cake.

You can either enjoy the cake at room temperature or have it chilled first in the fridge.

I have asked hubby to try a slice of the cake and after trying one slice, he decided to cut another slice. All I hear him say is DIE! DIE! DIE! Sooooo Good!!! So soft and light like feather...

In this post, I am sharing with you a cheesecake with a nutty pistachio filing. The light creamy cheese filling with real rosewater essence is sandwiched by the two layers of the pistachio cake. The cake compliments the soft creamy cheese filing and tasted great.

A great cake for afternoon coffee or after desserts. Definitely a hit with coffee or tea. One of the 'sin' of this cake is that you will not realise how many slices you will eat as it is simply irresistible.

Selamat hari raya maaf dzahir dan bathin to all. As usual...been busy with orders and I currently do not have the time and privilege to update the blog... just yet. That does not mean I am not operational for business. In fact, what prevented me from blogging these days is the time mostly spent in the kitchen baking day after day.

I must thank all my clients for the support to my business. It's been doing well beyond my expectations. Originally, I thought business would be quiet during Ramadhan that I could concentrate on making cookies for sale. However, I had cake orders on a daily basis for clients' consumption during Sungkai, that left me with little time to bake cookies.

So, in a nutshell, I am just telling you that just because the blog is not updated, that does not means I am stopping the business. It is still business as usual. Oreo Cheese Cake

There are many versions of Oreo Cheese Cake in the market and this is my version. You may order it in a round shape for a birthday cake, if you wish. I made this square version upon a customer's request so that they can be cut into small bites pieces.

I cut one side of the cake to show you how does it looked like from the inside of the cake......note the embedded oreo cookies.

Blueberries Crumble Cake

Blueberries have been in abundance in the supermarket lately that I decided to buy many. I was thinking what shall I do with them? I have used them in a light soya cheesecake.
I wanted to use them in a cake that will be delightful to eat during tea time. I finally came up with this idea..... Blueberries Crumble Cake. A sort of cobbler cake with crunchy top from the melted butter, flour and chopped walnuts. The white top derives from flour being sprinkled... not icing sugar.

The fresh blueberries really compliments with the crumbly dough. A great cake to eat with either light cream or vanilla ice cream on a hot sunny afternoon.

Hazelnut Praline Cake

Crunchy caramelized hazelnuts add flavour to this cake which is filled with milk chocolate cream. The surface is sprinkled with crushed praline that I made myself and the sides of the cake are decorated with chocolate rice. A lovely cake for chocolate lovers. Sushi Birthday Cake

It's been over two months since I last blog. Life has been hectic with the non-stop orders! Since my food tester is official back ( my hubby), I felt inspired to come up with new creations. It was hubby Pablo's birthday last night and I made him a surprise.. something different. I made him a sushi birthday cake. Made of real Japanese sushi rice and layers of Unagi (Japanese eel), egg, avocado, chicken, daikon and many other ingredients.

I'm not quoting the price here as I am not sure if any of my clients is interested to order this special creation. If there is anyone interested, it is best that they call me personally to inquire about the price of this cake.

Last week, I got an order for little Arief's birthday cake and I made a chocolate mousse cake with soft cheese filling. Since I knew there would be a lot of children coming to the event, I decorated the cake with candies and I read from AnakBrunei the excitement of the kids over the cake.

Pecan Laced Chocolate Cake

It's been quite a while since I last blogged! I've been busy entertaining orders which has been non-stop since the recent Chinese New Year. The response to my cakes has been overwhelming. Therefore, it has prevented me ample time to blog. But don't worry, I have not forgotten my loyal readers. :)

Today, I would like to share with you, a new dessert that I recently made for my son's birthday.

It's a very lovely cake especially for those who love the combination of cheese and chocolate. A double layered soft spongecake with chocolate cheese and top with chocolate ganache. This cake has a combination taste of sweet, salty and bitter. Great works on your taste buds! On top of that, you will find the texture of the cake contrasting: the crunchiness of the chocolate base, the softness of the cheese and the smooth chocolate frosting will certainly satisfy your taste buds!

Mandarin Torte with Orange Cream

Since it is Chinese New Year Festival and there are abundance of mandarin honey orange, I have used them to create this delightful dessert.

For decoration, I have used the fresh mini mandarin oranges and scattered some chopped walnuts on top of the cake.

Blueberries soya cheese cake

This cheesecake is made from soyabean or tofu! A light version of cheesecake. The combination of the cheesecake and fresh blueberries that you can see in the photo, is so pleasant and will surprise you. Since blueberries can be seasonal, I will then change the fruit by using mango. I have made this during Hari Raya Open House and many of my guests were surprised with the lovely and silky feel of the cake.

When you order this cake, it will be one big piece of cake. As in the photo, I have cut the cake into bite pieces for the recent cake sampling day and to show you the blueberries.

I know there are many versions of carrot cake available in the market. All I can say... my version is moist and is one of my best selling cakes. One customer never fails to order up to 15 cakes during Hari Raya and Chinese New Year festivities, respectively, as giveaways to friends and relatives. Pavlova

You must have heard me talking about Pavlova tonight during the Pilehan FM Radio show. Yes! Finally got hubby Pablo to take some shots of it as a client ordered it tonight.

A soft dessert with lots of fruits on top, as you can see. This is one of my best selling desserts! It is not easy to make as it can be quite moody in terms of outcome! So, special care is taken that the meringue will come out nice and crisp!

Orange Mango Cheese Cake

I usually make it using digestive biscuits as it's base. However, a client requested for a sponge cake version. This is a very light dessert, with real orange juice and cut mangoes mixed in the filling of the cake. Normally when someone orders this cake, it will not be decorated unless there is a special request from clients.

Apple, date and walnut dumplings with butterscotch sauce

It's been many years since I started making these dumplings at family dinners. Hubby Pablo got invited for dinner last night at a school mate's place and I told him I would make these. Using an old English recipe, the apple were de-cored and stuffed with chopped dates and walnut. Later the apples were enveloped with pastry and I designed some pastry leaves, to give that beautiful 'real' apple effect.

The dumplings are served with a butterscotch sauce. It can also be eaten with cream or vanilla ice-cream. Great for dessert, especially after a western meal.

You can see the dates and walnut in the middle of the apple when it is cut.

Durian Mousse Cake

Based on an European recipe, I have created this cake using real flesh from the 'king of fruits'. If you are a big fan of durian, this is the cake for you. This cake is one of my best selling desserts for the past five years. It is popular among the Chinese Community, especially during the Chinese New Year.

Although the smell of durian can be pungent, however, I have devised a packaging for the cake to be taken on the plane. So far, this cake has been tasted by my clients not only in Brunei but also to include Malaysia, Singapore, Indonesia, the Philippines, Cambodia and Thailand.

Today, a lady customer ordered this cake for her girl friend who is getting married. Hope she will enjoy the cake.

Rich Truffle Cake

Have you tried a flour-less cake? I have made several versions and this is one of them. Using real chocolate and cream, I made this gluten-free chocolate cake. Truly delicate but delicious. A recommended dessert for chocoholics.

You can eat it with fresh fruits like raspberries or have it with vanilla ice-cream.

During the recent Chinese New Year, a client has made an order and asked me to decorate it with fruits. Here are the results.

I decorated the cake with fresh strawberries dipped in chocolate and some sliced kiwis. I then added edible chocolate leaves ( that I made myself), to complete the decoration.

Mini Hazelnut chocolate cakes

Today I made mini chocolate cakes, using the friands pan to give that oval shape. The cakes, using hazelnut meal, give them a light nutty feel. I used milk chocolate ganache for the topping. The kids seem to love these little cakes as they were gone within minutes.

Neopolitan Cake

Many of you may have eaten Neopolitan Ice-cream? The trio flavours of chocolate, strawberry and vanilla ice-cream. Using that as an inspiration, I created a cake of the same name, assembling cakes of chocolate, strawberry and mango flavours. The end result is a cake that looks like the real ice-cream.

I made this during my brother-in-law's birthday and it was a sell-out. Everyone seemed to have enjoyed it. The flavours of mango and strawberry are made from real fruits.

Chocolate marble cake

Many of you may be familiar with this cake, famously known in Malay as 'KEK DAMAL'. However, my version is of a slight difference. Many bakers use artificial vanilla essence to get rid of the 'fishy' smell from the butter as well as the eggs. But I use lemon juice to do the job. The effect is a nice aroma cake that is not too zesty since this is a chocolate cake. The other difference is that I use real melted Belgium chocolate instead of cocoa powder. So, you can really taste the chocolaty taste!! A must try for cake lovers!
